Some Observations on the Stability of Vitamin C.

چکیده
It is well-known that Vitamin 0 rapidly undergoes oxidation 011 exposure to light and heat. It is also known that the oxidation is much more rapid in alkaline than in acid solution. This experiment was carried out in order to study the rate of deterioration of Vitamin C under different conditions and to find the conditions of its maximum stability. Even in well-known standard books conflicting records of observations have appeared. The B.P.C., 1934 states, "The zone of optimal stability atordinary temperature is in the neighbourhood of the natural acidity of the lemon juice (pH 2.2) and natural lemon juice can be kept without loss of potency for as long as 14 months at room temperature without any addition". Whereas according to Extra Pharmacopoeia, 1943, the point of maximum stability liesat about pH 5.4.

Formation and stability of Vitamin E nano-emulsion based delivery systems by spontaneous emulsification method: Glycerol as a co-solvent
There is considerable interest in using nano-emulsions (NEs) as delivery systems for lipophilicbioactive ingredients. In this study, the influence of G on the properties of vitamin E (VE) enriched NEsprepared using spontaneous emulsification (SE) method, were investigated. The particle size and optical clarityof the NEs depended strongly on the co-solvent presence, absence, an...
متن کاملStability Study of Vitamin D3 in Sunflower Oils and Oleogels Based on Rice Bran Wax and Sorbitan Monostearate
Background and Objectives: Due to the good solubility of vitamin D in oils, oil products can be addressed as one of the most suitable fortification vehicle. However, sustainability and loss of vitamin D during food storage is one the major concerns for the food policymakers and producers. Therefore, the objectives of this study was to fortify and compare the stability of vitamin D3 in sunflower...
متن کاملEffect of Sargassum sp. and Vitamin E on Stability of Fish Oil Enriched Meat in Broiler Chickens
The present study was aimed to assess the influence of brown marine algae and vitamin E (VE) (160 ppm α-tocopheryl acetate) on stability of chicken meat enriched with fish oil. In this study, 360 d-old broilers (Arbor Acres Plus) were randomly assigned to 6 treatment groups with 4 replicates of 15 birds in each. Experimental groups consisted of corn-soybean basal diet (C), corn-soybean basal di...
متن کاملVitamin C and Chitosan Alleviate Toxic Effects of Paraquat on Some Biochemical Parameters in Hepatocytes of Common Carp
Background: Paraquat is nonselective bipyridyl herbicide that induces hepatotoxicity through oxidative stress. Vitamin C and chitosan have antioxidant as well as radical scavenger properties and show protective effects against reactive oxygen species (ROS). In the present study, hepatoprotective effects of chitosan and vitamin C were evaluated in common carp exposed to paraquat. Methods: Whi...
متن کاملComparison of Different Selenium Sources and Vitamin E in Laying Hen Diet and Their Influences on Egg Selenium and Cholesterol Content, Quality and Oxidative Stability
An experiment was carried out to compare the effects of laying hen’s diet supplemented with inorganic and different organic sources of selenium (Se) on quality and oxidative stability of eggs during storage. A total of 81, (35-week old) laying hens of Lohmann LSL-White were assigned to cages in a completely randomized design with 9 groups of treatment and 3 replicates of 3 birds. Hens in each g...
متن کاملThe effects of Vitamin C on quality of semen, testicular tissue, and level of apoptosis in mice exposed to sodium arsenite
Background: Arsenic as a heavy metal exerts malformation and changes in the reproductive system of men via induction of oxidative stress. We sought to investigate the impact of Vitamin C (Vit C), as a potent antioxidant, on sperm quality and testicular tissue in mice that received sodium arsenite. Methods and materials: NMRI mice were classified into four groups: control, sodium arsenite (7 mg...
